🍵 Matcha Chia Pudding Parfait 🌿

A creamy, dreamy matcha-infused chia pudding layered with coconut yogurt and fresh fruit.

Ingredients:

For the Matcha Chia Pudding:

  • 2 tbsp chia seeds

  • 1 cup almond milk (or any plant-based milk)

  • 1 tsp matcha powder (ceremonial grade for best flavor)

  • 1 tbsp maple syrup or honey

  • ½ tsp vanilla extract

For the Layers:

  • ½ cup coconut yogurt (or any plant-based yogurt)

  • ¼ cup granola

  • ¼ cup fresh berries (strawberries, blueberries, or raspberries)

  • 1 tbsp shredded coconut (optional)

Instructions:

  1. Prepare the Chia Pudding

    • In a mixing bowl, whisk together matcha powder and almond milk until fully dissolved.

    • Stir in chia seeds, maple syrup, and vanilla extract.

    • Let sit for 5 minutes, then stir again to prevent clumping.

    • Cover and refrigerate for at least 3 hours or overnight for best results.

  2. Assemble the Parfait

    • Once the chia pudding is thickened, stir well.

    • In a glass or jar, layer matcha chia pudding, coconut yogurt, and granola.

    • Repeat the layers and top with fresh berries and shredded coconut.

  3. Serve & Enjoy!
